About Heritage Hospitality Consulting
Heritage Hospitality is passionate about helping businesses thrive in this competitive and exciting industry.
It is a pleasure to work with a wide variety of private owners including independent hotels, exclusive use properties, private estates and tourism venues, to help drive both existing and new businesses forward, generating long term value and returns for clients.
We also work closely with a fantastic range of specialist industry suppliers to provide a one stop shop for whatever services you need help with.
Heritage Hospitality Consulting is headed up by Rosemary Spenke. Rosemary has spent her entire career in hospitality and now through her own business, provides professional support, sound advice, hands on practical help, and consulting with integrity to independent hospitality owners, who for whatever reason, are needing external support for periods of time to drive change and improvements in their businesses.
As a bit of background, Rosemary was brought up in hotels from an early age with parents who were both Chefs and who then went on to create two small luxury red star Scottish country house hotels; it was hence a natural progression to choose a hotel career! After securing a degree in Hotel and Tourism Management, she has worked in some fabulous five-star hotels and restaurants in both France and the UK; working with Intercontinental Hotels, The Savoy Group of Hotels, Conran Restaurants and Malmaison Hotels. She then decided to join the family business back in Scotland, Balbirnie House Hotel in Fife, resulting in the development of an award-winning 4 red star country house hotel with Small Luxury Hotels of the World membership. After successfully building the family business, she decided to move on firstly to pursue a Strategic Marketing postgraduate, then to explore opportunities to work with other independent hospitality owners. Over the last 11 years, Rosemary has moved on to oversee a wide variety of projects with different clients, both in the UK and Ireland, firstly developing Kinross House Estate into a luxury exclusive use destination, entrusted with developing a luxury brand and establishing the estate as Scotland’s most luxurious estate hire. And thereafter working with a diverse mix of independent owners who are keen to drive their businesses further forward, including both boutique hotels and private estates. See more here.
